Somen Watercress Salad
"Somen and watercress is a popular salad for family gatherings in Hawai'i. I grew up with my mom making a version of it, and when my sister made it for a party in September, I made a note that I wanted to make it for the holidays. The red and green colors remind me of Christmas, but this is a great dish year-round!"

Somen Watercress Salad

Ingredients
Somen Noodles, 1 Package
Firm Tofu, 16 Ounces
Watercress, 1 Bunch
Cherry Tomatoes, 24 Tomatoes
Maika`i Asian Sesame Dressing
Green Onion (optional): 1/2 Cup
Directions
Ingredients
- 1 package somen noodles
- 16oz firm tofu
- 1 bunch watercress
- 24 small red tomatoes (plum or cherry tomatoes)
- Maika`i Asian Sesame Dressing
- 1/2 cup green onion (optional)
Directions
- Cook somen noodles according to package directions.
- Drain noodles and rinse.
- Use a forn to twirl servings of somen noodles into balls. Place in a layer in a 13x9-inch dish.
- Drain tofu and press out liquid. Cut tofu into small cubes and put on top of somen noodles.
- Cut watercress into 1-inch pieces and cut tomatoes in haalf. Add to salad.
- Serve immediately with dressing or make ahead of time and store in the fridge until you're ready to serve.
Optional: Sprinkle green onion evenly over noodles and tofu.
