Cashews, 1 Cup
Asparagus, 1 Pound
Neutral Oil, 1 Tablespoon
Kosher Salt, 1/2 Teaspoon
Freshly Ground Black Pepper, 1/4 Teaspoon
Lime Juice, 2 Tablespoons
Garlic, 2 Cloves
S&B Crunchy Garlic Rice Topping, as needed
Directions

Ingredients

  • 1 cup cashews
  • 1 pound asparagus
  • 1 tablespoon neutral oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • S&B Crunchy Garlic Rice Topping (for garnish), as needed

 

Directions

  1. Preheat oven to 400F and soak 1 cup of cashews in water for 30-45 minutes.
  2. Wash asparagus then trim bottoms (about 1").
  3. Transfer asparagus to a baking tray then season with oil, salt, and black pepper.
  4. Roast at 400F for 12-15 minutes or until asparagus is tender enough to be easily pierced with a fork.
  5. Remove asparagus from oven then carefully transfer asparagus into a blender along with 2 tablespoons lime juice, 2 garlic cloves, and 1 cup cashews (soaked and drained).
  6. Blend until slightly smooth, periodically turning off the blender and stirring sides to ensure even blending.
  7. Season with salt & pepper to taste, then transfer to a serving dish, garnish with S&B Crunchy Chili Garlic, a fresh squeeze of lime juice, and serve with your choice of chips or sliced veggies.
