Chef Brian prepares his favorite Cranberry Relish recipe that is perfect for Thanksgiving. Made with fresh cranberries, pineapple and li hing for a local twist.

Ingredients
Fresh Cranberries, 4 Cups
Fresh Pineapple, 2 Cups
Orange Juice, 1 Cup
Brown Sugar, 2 Cups
Water, 1 Cup
Li Hing Powder, 1 Tablespoon
Star Anise, 4 Pieces
Seedless Li Hing Cherries, 1 Package
Directions

Ingredients

  • 4 cups fresh cranberries
  • 2 cups fresh pineapple, pelled, cored, and cut into 1 inch pieces
  • 1 cup orange juice
  • 2 cups brown sugar
  • 1 cup water
  • 1 tablespoon li hing powder
  • 4 pieces star anise
  • 1 package seedless li hing cherries, chopped

 

Directions

  1. In a pot, combine cranberries, fresh pineapple pieces, water, juice, sugar, and anise. Bring to a boil and reduce to a simmer for about 30 minutes.
  2. When sauce is slightly thickened, turn off heat and add li hing powder, and seedless li hing cherries, and mix well.
  3. Remove the 4 star anise and place in refrigerator to chill.

Notes: Sauce can be made up to 5 days in advance.
