Chef's Striploin Roast
Conventional Oven:
- Bring striploin roast to room temperature prior to cooking by leaving out for 1 to 2 hours before proceeding.
- Preheat oven to 275°F.
- Remove plastic lid and herbs from pan.
- Place in center of the oven and roast for 1 to 1.5 hours or until you reach desired doneness.
- Let rest for 15 minutes before slicing.
- Transfer to a serving platter and garnish with garlic, tomatoes, and herbs.
- Serve with horseradish and natural jus on the side.

*Remember that these are final doneness temperatures. Your "pull from the heat" temperature should be 5-7°F below the temperatures shown (depending upon the size of the striploin roast) to allow for carryover cooking during the resting period.

Creamy Horseradish
- Serve chilled
Natural Jus
- Stove Top (preferred)
- Transfer natural jus to a saucepan.
- Heat on medium high until it simmers, stirring occasionally.
- Remove from heat and serve immediately.
- Microwave
- Remove lid and cover with plastic wrap.
- Microwave on high for 2 minutes, stirring occasionally. Repeat in 30-second increments until heated through.
- Serve immediately.
- Be careful when microwaving liquids as they can heat quickly and may cause burns if handled improperly.
Roasted Asparagus
- Conventional Oven (preferred):
- Preheat oven to 350°F.
- Transfer asparagus, smoked meat, and onions to an oven-safe dish.
- Heat uncovered for 10 to 12 minutes or until heated through.
- Remove from heat and dress with shoyu vinaigrette. Serve immediately.
- Microwave Oven:
- Remove lid and shoyu vinaigrette. Cover with a damp paper towel.
- Microwave on high for 2 minutes then mix. Repeat in 1-minute increments until heated through.
- Dress with shoyu vinaigrette and serve immediately.
Truffle Parmesan Potato Au Gratin
- Conventional Oven (preferred):
- Preheat oven to 350°F.
- Transfer potato au gratin to an oven-safe dish and cover with aluminum foil.
- Heat for 25 to 30 minutes or until heated through.
- Remove from heat and dress with truffle oil. Serve immediately.
- Microwave:
- Remove lid and truffle oil. Cover with a damp paper towel.
- Microwave on high for 3 to 5 minutes. Repeat in 1-minute increments until heated through.
- Dress with truffle oil and serve immediately.
Winter Greens
- Serve chilled
Baked Brie
- Conventional Oven:
- Preheat oven to 350°F.
- Transfer brie to an oven-safe dish.
- Heat for 6 to 8 minutes or until warm to the touch.
- Let rest for 1 to 3 minutes and dress with provided accompaniments.
- Serve immediately with lavosh.
- Make sure not to overbake as this will cause the cheese to seep out of the rind and pool at the bottom of the pan.
- Microwave:
- Remove brie from container and place on a microwave safe plate.
- Microwave on high for 60 seconds. Repeat in 15-second increments until warm to the touch.
- Let rest for 1 to 3 minutes and dress with the provided accompaniments.
- Serve immediately with lavosh.
Chilled Poached Shrimp
- Serve chilled.
Prime Rib Dinner
Fully cooked, warm to serving temperature (Do not overheat)
Suggested Warming Method: Sous Vide/water bath in kettle or steamer - Product is in handled sous vide bag.
- Reheat only from fully thawed.
- Submerge unopened sous vide package in boiling water (handle side up) on top of stove.
- Approximate heating time 25-40 min.
- Water bath times vary, use meat thermometer to warm to desired doneness on chart below.
- Suggest checking internal temperature at approximately 25 minutes.
- Carefully remove bag from boiling water by handle after warming to desired temperature.
- Remove roast from bag, place on baking sheet and heat in 400°F preheated oven for 5-10 min to caramelize. Sea salt crystals and/or cracked black pepper may be added for appearance.
- Preheat oven to 325°F; remove roast from packaging
- Place roast and juices in covered baking pan, add 1 cup water.
- Warming time approximately 60 to 90 minutes, depending on desired degree of doneness.
- Oven temparatures vary, check center of roast with meat thermometer then remove lid or foil for last 5-10 min to caramelize. Sea salt and/or cracked black pepper may be added for appearance.

Cooking times may vary with the oven or microwave. All items to be reheated are packed in microwaveable containers for ease of handling.
Loaded Potato Casserole (Bacon, Cheddar, Scallion) (32 oz.)
- Oven: Preheat to 350°F. Place contents of container in a covered ovenproof dish. Heat for approximately 15-20 minutes.
- Microwave: Place container in microwave and heat on high for 10-12 minutes. Mid-way through heating, stir. Let stand for 1 minute, stir before serving.
- Oven: Preheat to 350°F. Place contents of container into a covered ovenproof dish. Heat for approximately 18-20 minutes, stirring occasionally.
- Microwave: Place container in microwave on high heat for 7 to 10 minutes. Mid-way through heating, stir.
- Stove: Place contents of container in a pot. Bring to a slow boil, sitrring occasionally.
- Microwave: Place container in microwave and heat on high for 3 to 5 minutes, stirring occasionally.
- Oven: Preheat to 350°F. Place contents of container in a covered ovenproof dish and heat for approximately 10-12 minutes, sitrring occasionally.
- Microwave: Place container in microwave and heat on high for 7 to 10 minutes, stirring occasionally.
