Loaded "Smashed" Potatoes

Ingredients
Small Yukon Gold Potatoes, 8 Potatoes
Unsalted Butter, 8 Tablespoons
Sour Cream, 1 Cup
Shredded Cheddar Cheese, 8 Tablespoons
Bacon Bits, 8 Tablespoons
Salt & Pepper, to taste
Oil
Optional: Parsley, for garnish

- 8 small Yukon Gold Potatoes
- 8 tablespoons unsalted butter
- 1 cup sour cream
- 8 tablespoons shredded cheddar cheese
- 8 tablespoons bacon bits
- Salt & pepper
- Oil
- Optional: Parsley for garnish
Directions
- Preheat oven to 400F.
- Rinse potatoes.
- In a bowl, coat potatoes with oil and season with salt and pepper.
- Bake potatoes for 30 to 45 minutes. Use a toothpick or chopstick to poke the potatoes to see if it's cooked all the way. There shouldn't be any resistance.
- Smash the potatoes with the back of a measuring cup, large spoon, or small plate.
- Top with unsalted butter, sour cream, shredded cheddar cheese, and bacon bits.
- Optional: Garnish with parsley.
