Dragon Fruit (Pitaya), 1 Dragon Fruit
Mango (frozen), 1 Cup
Pineapple (frozen), 1/2 Cup
Banana, 1 1/2 Banana
Almond or Soy Milk, 3/4 Cup
Granola, 1/4 Cup
Strawberries, 2 Strawberries
Blueberries, 1/4 Cup
Goji Berries, 1 Pinch
Shredded Coconut, 1 Pinch
Directions

Ingredients

  • 1 dragon fruit (pitaya)
  • 1 cup mango (chopped, frozen)
  • 1/2 cup pineapple (chopped, frozen)
  • 1 banana, plus 1/2
  • 3/4 cup almond or soy milk
  • 1/4 cup granola
  • 2 strawberries (sliced)
  • 1/4 cup blueberries
  • 1 pinch goji berries
  • 1 pinch shredded coconut

 

Directions

  1. In a blender, combine the frozen dragon fruit, mango, pineapple, banana (peeled), and almond milk.
  2. Blend until smooth. If the blend is too thick, you may adjust with a little more milk.
  3. Pour into a soup bowl. Garnish with granola, banana slices, strawberry, blueberry, goji, and shredded coconut.
  4. Optional: Drizzlel honey or agave on top.

 

Notes: The pureed dragon fruit should be on the thick side so it can be eaten with a spoon. You can adjust the toppings to your own preference. You may also experiment with the fruit blends used in the blended puree.
