Chef's Valentine's Day Dinner Heating Instructions


Shrimp & Crab Cake
  • Oven: Preheat oven to 350F. Place crab cakes in ovenproof bakeware and cover with foil. Heat for 8-12 minutes (flipping halfway through) or until the internal temperature reaches 165F.
  • Microwave: Transfer to a microwave-safe container and cover with a damp paper towel. Heat on high power for 3-5 minutes or until the internal temperature reaches 165F.
  • Honey Sambal Remoulade & Pickled Cucumber: Serve cold.

Cabernet Braised Beef Short Rib
  • Oven: Preheat oven to 350F. Place short ribs in ovenproof bakeware, pour the natural jus over short ribs, then cover with foil. Heat for 15-25 minutes or until the internal temperature rreaches 165F
  • Microwave: Transfer to a microwave-safe container, pour natural jus over short ribs, then cover with a damp paper towel. Heat on high power for 3-5 minutes or until the internal temperature reaches 165F.
  • Bearnaise Butter: Store at room temperature until softened and spreadable.
  • Finishing: Using a spoon, scoop the bearnaise butter onto the braised short rib before serving.

Tristan Lobster Tail with Thermidor Butter
  • Oven (recommended): Preheat oven to 350. Place lobster in an ovenproof pan and heat for 6 minutes or until the internal temperature reaches 165F.
  • Microwave: Transfer to a microwave-safe container and wrap with plastic wrap. Poke holes in the plastic wrap for venting. Heat on high power for 1 minute or until warmed through. Heat longer as needed in 30-second increments until the internal temperature reaches 165F. Be careful nott to overcook the lobster as this will give it a rubbery texture.
  • (Chef's Tip: Collect pan drippings, reheat, and use to sause lobster before serving)

Blistered Asparagus & Ho Farm Tomatoes
  • Oven: Preheat oven to 350. Place asparagus and tomatoes in overnproof bakeware and heat for 5-8 minutes or until hot. (Chef's Tip: Broil for the final 2-3 minutes.)
  • Microwave: Transfer to a microwave-safe container and cover with a damp paper towel. Heat on high power for 2-3 minutes or until hot.

Truffle Parmesan Baby Gem Potatoes
  • Oven: Preheat oven to 350F. Place just the potatoes on a baking pan, and heat for 10 minutes or until hot.
  • Microwave: Transfer to a microwave-safe container and cover with a damp paper towel. Heat on high power for 2-3 minutes or until warmed through.
  • Finishing: After heating, finish by drizzling truffle oil and topping with grated parmesan cheese.

  • Serve cold.
