Togarashi Seared Ahi Sashimi
  • Shingle the seared ahi sashimi neatly on a small serving plate, ensuring slices are evenly spaced.
  • Top each slice of ahi sashimi with a piece of pickled radish.
  • Take half of the watercress salad and place it directly above the arranged sashimi, covering a portion of the plate.
  • Vigorously shake the ponzu-ginger vinaigrette until fully emulsified. Drizzle the vinaigrette evenly over the sashimi and watercress salad.
  • Serve cold.

Certified Angus Beef Braised Short Rib with Smoked Shoyu Demi-Glace
  • Oven:
    • Preheat oven to 350F.
    • Rmove lid and transfer shrimp and butter to a separate oven-safe bakeware. Place lemon and parsley on the side for later use.
    • Keeping the short ribs in the oven-safe bakeware provided, pour the smoked shoyu demi-glace over short ribs, then cover with foil.
    • Heat for 15-25 minutes or until the internal temperature reaches 165F.
  • Microwave:
    • Transfer short ribs to a microwave safe container, pour smoked shoyu demi-glace over short ribs, then cover with plastic wrap.
    • Heat on high power for 3-5 minutes or until the internal temperature reaches 165F.

Pulehu Jumbo Shrimp with Roasted Garlic & Herb Butter
  • Oven (recommended): 
    • Preheat oven to 350F.
    • Place shrimp in an oven-safe bakeware and top shrimp with butter.
    • Heat for 5-6 minutes or until the internal temperature reaches 165F.
    • Serve hot with lemon wedge and garnish with parsley.
    • (Chef's Tip: Collect pan drippings and use to sauce shrimp before serving.)
  • Microwave:
    • Transfer shrimp to a microwave safe container and cover with plastic wrap. Poke holes in the plastic wrap for venting.
    • Heat on high power for 1 minute or until warmed through. Heat longer as needed in 20-second increments until the internal temperature reaches 165F.
    • Serve with lemon wedge and garnish with parsley.
    • (Chef's Tip: Be careful not to over-cook the shrimp as this will give it a rubbery texture.)

  • Microwave: 
    • Transfer asparagus, tomatoes, and pearl onions to a microwave-safe container and cover with a damp paper towel.
    • Heat on high power for 2-3 minutes or until hot.

Potato & `Ulu Gratin Dauphinoise
  • Oven: 
    • Preheat oven to 350F.
    • Place potato dauphinoise in an oven safe bakeware and heat for 8-10 minutes or until hot.
    • (Chef's Tip: Broil for the final 1-2 minutes.)
  • Microwave: 
    • Transfer potato dauphinoise to a microwave safe container and cover with a damp paper towel.
    • Heat on high power for 2-3 minutes or until hot.
