Dynamite Kim Chee Shrimp & Lup Cheong Stuffed Mushrooms

Crimini or Button Mushrooms, 1 Pound
Salt & Pepper, to taste
Lup Cheong Sausage, 3 Ounces
Kim Chee Shrimp Poke, 1/4 Pound
Sriracha Mayo, 1/2 Cup
Yellow Onion, 1/4 Medium Onion
Directions
Ingredients
- 1 pound crimini or button mushrooms (as large as possible)
- Salt & pepper, to taste
- 3 ounces lup cheong sausage
- 1/4 pound kim chee shrimp poke
- 1/2 cup sriracha mayo
- 1/4 medium yellow onion
Directions
- Preheat oven to 350F.
- Remove stems from mushrooms and bake bottom up for 15 minutes. This will render water content to ensure filling consistency. Drain and season with salt and pepper, and let cool.
- Small dice lup cheong and saute. Let cool.
- Mince Kim Chee Shrimp and small dice onions.
- In a bowl, combine kim chee shrimp, onions, lup cheong, and sriracha mayo, and mix thoroughly. Add salt and pepper to taste.
- Fill the mushrooms with filling and bake for another 10 minutes.
- Broil for 4 minutes and serve.
