Fresh Island Fish, 1 1/2 Pounds
Local Grape Tomatoes, 1/2 Cup
Kalamata Olives, 1/4 Cup
Capers, 4 Tablespoons
Lemon Juice, 2 Lemons
Maika`i Extra Virgin Olive Oil, 8 Tablespoons
Kosher Salt, 1 Tablespoon
Black Pepper, 1/4 Teaspoon
Optional: Italian Parsley, 1 Bunch
Directions

Ingredients

  • 1 1/2 pounds fresh island fish (sliced into 4 filets)
  • 1/2 cup local grape tomatoes
  • 1/4 cup kalamata olives
  • 4 tablespoons capers
  • 2 lemons, juicce only
  • 8 tablespoons Maika`i Extra Virgin Olive Oil
  • 1 tablespoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional: 1 bunch Italian Parsley

 

Directions

  1. Season fish filets with salt & pepper.
  2. In a skillet heated to medium0high heat, add olive oil.
  3. Sear fish filets for approximately 3 minutes on each side until golden brown and the center of filets are medium in doneness.
  4. Remove fish from skillet and place on a serving platter.
  5. In the same skillet, add the olives, tomatoes, and capers.
  6. Sear for 1 minute or until tomatos are slightly blistered.
  7. Remove skillet from heat and add lemon juice.
  8. Gently toss the ingredients together and spoon evenly over the fish.
  9. Optional: Garnish with Italian parsley.
