Ingredients
Bean Thread Noodle, 1 Package (8 Ounces)
Chicken Breast, 1 Pound
Ginger, 1 Piece (2-3 Inches)
Chicken Broth, 40 Ounces
Green Onion, 1/4 Cup Chopped

- 1 (8 oz) package of bean thread noodle
- 1 pound chicken breast
- 1 (2-3 inch) piece of ginger
- 40 ounces chicken broth
- 1/4 cup chopped green onion
Directions
- Soak long rice in water until it softens.
- Peel and grate the ginger.
- Heat the broth and ginger, bring to a boil.
- Add in the chickecn and reduce heat to medium-low, then simmer for 20 minutes.
- Remove chicken and let it rest for 5 minutes.
- Shred chicken with a fork.
- Add in long rice and the shredded chicken, then simmer for 10 minutes at medium-low.
- Add salt and pepper to taste.
- Top with chopped green onions.
