The pasta is kneaded slowly and dried at low temperature to keep intact the organoleptic properties. One of our specialties is the pasta with wheat germ. Using our artisanal techniques we process the fresh wheat germ, immediately, when still fresh. An intense wheat aroma is released during cooking and the water turns slightly green, because of the presence of fresh wheat germ that gives the pasta an extraordinary and unmistakable flavor. Other varieties of Antico Pastificio Morelli's pasta are: pasta with eggs, bran, soy, corn 100% from organic farming, spelt 100% from organic farming, black squid ink, mushrooms (edible boletus), salmon, garlic and basil, saffron, truffles, in many fantasy shapes.
